The brewey was founded by Søren Andersen and Michael Hansen. Michael Hansen Sidstnævnte withdraw december 2005, where Preben Bladt bought his 45 percent shares.

Midtfyns Bryghus introduced their first beers february/march 2005. January 2007 bought Eddie Szweda the brewery. At the same time made he some changes. BravehearT and Moulin Ale stopped and new beers was introduced.

Introducered september 2008. First beer in a serie, where Midtfyns Bryghus invites a home brewer to brew a beer. First brewer was Ditlev Jørgensen, Svendborg Bryggerlaug, who wan silver at the Danish championship in home brew 2007 with the same recipe.

Brewed on four different types of malt, spiced with coriander and staranise. Fuggel and cascade hops.
